First, we buy only small lots of the highest grade arabica beans available. Secondly we roast our beans long and slow in order to coax the finest flavors from every bean. And, our coffee is air cooled, not water quenched like commercial coffee - its more work for less coffee, but the result is a fresher, more flavorful bean.
